"Elstar" este un soi de măr olandez foarte cunoscut și popular. Pomul este de mărime medie, cu o coroană sferică semi-deschisă și aplatizată. Arborele are o înălțime de (5)6-8 m. Pomul înflorește la sfârșitul primăverii. Mugurii florali de culoare roz închis se deschid pe la jumătatea lunii mai până la începutul lunii iunie. Florile sunt de culoare roz deschis. Merele pot fi culese din a doua săptămână a lunii septembrie până la sfârșitul lunii septembrie. Acestea sunt mici, rotunde și de formă foarte regulată. Sunt de culoare galben-verzui cu un fard roșu aprins intens și dungi. Culoarea este foarte dependentă de cantitatea de lumină pe care o primesc merele. În interiorul pomului, merele "Elstar" sunt semnificativ mai verzi. Pulpa este destul de fermă, de culoare alb-crem, suculentă și cu o aromă dulce-acrișoară caracteristică. Gustul este proaspăt, dulce-acrișor și oarecum asemănător mierii. "Elstar" este un măr de mână excelent, care se păstrează bine. Merele sunt foarte potrivite pentru prăjituri și în salate, dar sunt nepotrivite ca mere pentru piure sau pentru suc. Este un soi bun pentru utilizare în grădinile private.
